For all my waffle lovers out there, this simple homemade waffle recipe is super simple to make and tastes great! For an even quicker breakfast, make a bulk batch of the dry ingredients.

My kids and I love making breakfast, and this from-scratch, simple homemade waffle recipe makes the rotation about once a week. Most days, we stick to the basic recipe, but we love to mix it up with different add-ins and toppings. One of their favorites is a mini chocolate chip in each hole, and I love some chopped pecans. When my husband is around, the “I’ve got a few extra minutes” treat is a hot blueberry syrup poured on top. Am I making you hungry yet?
Ingredients

Flour- All-purpose flour works great. When I make a bulk batch, I like to grind some fresh whole wheat flour and put about 1:4 fresh:all-purpose (or any whole wheat works too!)
Sugar- If you’ve been around me at all, you know I go for healthier options when possible, so I like to use organic cane sugar (we buy it at Costco). Any sugar will work here.
Baking Powder- Aluminum free if possible
Salt- I love Redmond’s Real Salt
Milk- Any milk should work. If I have buttermilk on hand, that’s my go-to.
Butter- unsalted
Egg
Optional add-ins or toppings: Cinnamon, vanilla, blueberries, chocolate chips, nuts, grated cheese, scoop of sourdough, blueberry syrup…
Notes on addins:
If I add sourdough, I usually add a little less flour and milk to balance out ingredients (no measuring, “handful of flour” approach). Stir it into the wet ingredients.
If you haven’t had a cheesy waffle, you’ve got to give it a try. I usually have grated colby jack on hand, or a cheddar would be good too. Again, I just add in a couple handfuls until the consistency is what I want (make sure there’s plenty of batter to cover all the cheese).
Cinnamon is excellent for a bit of extra flavor (plus it’s got health benefits too!); add it to the dry mix.
If you put blueberries in the batter, fresh works best. If they’re frozen, thaw them while you mix the batter. Make sure the waffle is cooked all the way through before removing from heat. With pancakes especially, the outside looks great and the batter around the blueberry is still frozen. When in doubt, put the blueberries on as a topping.
Vanilla gets mixed in with the wet ingredients
Most dry add-ins get added at the end, just give a quick stir and don’t over mix.
Process: How to make simple homemade waffles
Preheat waffle iron. I have a Cuisinart Classic Waffle Maker WMR-CA.
Mix dry ingredients in a bowl- flour, sugar, baking powder, salt, (cinnamon).
Whisk milk and egg in a bowl or large measuring cup. I like to use a 2 cup measuring cup and then I don’t have to dirty another bowl.
Pour milk/egg into dry mixture until barely combined.
Carefully stir in melted butter.
If you’re adding pecans, chocolate chips, or other add-ins, stir those in now.
Pour mixture into waffle iron and cook to perfection! ½ cup of batter works perfectly in my waffle iron. I like the setting around a 4.
Top with your favorite ingredients- syrup, nuts, whipped cream, sprinkles, etc.

Bulk Options
I like to make a bulk batch of dry ingredients. With 3 littles in the house, not pulling out flour and sugar makes a huge difference in the mornings! I make a 5-6x recipe in a bowl, scoop a little over 4 cups into a quart container, and use the rest for that days’ breakfast. For quick reference, write the recipe on the container. To make a 1x batch of waffles, use a heaping cup of dry ingredients (1 cup +1½ Tbsp), and follow the remainder of the recipe as is.

Q and A
- Can I mix everything in the same bowl? Yes, but it’s better to mix the egg and milk separately. Stirring too much develops the gluten in the flour which binds it together and can make a more rubbery or tough waffle.
- Can I substitute oil for the butter? Yes, coconut oil is my favorite if you don’t mind the flavor profile in your waffles.
- Can I use sourdough discard? Yes, I like to add 1-2 spoonfuls. I add a little less flour and milk to keep the wet/dry ratios the same.

Notes
* I use a Cuisinart Classic Waffle Maker WMR-CA. I spray with cooking oil when I remember (not necessary) and put about ½ cup batter in at a time.
- This recipe is perfect for me and my two toddlers, with 1-2 waffles leftover. When my husband joins us, I make a 2x recipe.
- I make a dry mix ahead of time. I’ll do 4-8x the dry mix in a bowl, mix together really well, then pour into a ziplock bag. I write the recipe on the bag. The recipe will use about 1c plus 1½ Tbsp of dry mix, so I just use a heaping cup and add it to the wet ingredients. See post for recipe quantities.
